Build me a local first Spring Boot microservices project called Kafkateria with three services, order service, payment service, and notification service, all working together through Kafka. I want users to be able to create orders through a REST API, see orders in a database, and have the system automatically publish an order created event, process payment, and then update the order to confirmed or cancelled based on whether the payment succeeds.

Please include PostgreSQL for each service, Docker Compose for the local setup, and a simple way to inspect messages and traces, like Kafka UI and Jaeger. The payment logic can be simple, if the amount is 5000 or less it succeeds, otherwise it fails. Notifications should be created for both the order and the payment outcome. Use clean error responses, validation on request bodies, and good logging with trace IDs. Also add integration tests that use real Kafka and PostgreSQL so I can run the full flow locally.
