Build me a simple Docker Compose setup for the Elastic stack so I can get Elasticsearch, Kibana, and Logstash running locally with as little fuss as possible.

I want to be able to start it with one setup command first, then bring the whole stack up, open Kibana in the browser, and log in with the default credentials from the env file. Please include the basic initial setup for users and passwords, and make sure the stack is easy to tweak for local testing rather than pretending it is production ready.
