Build me a simple Docker Compose setup for running an Ink node on my machine.

I want to be able to copy an env file, set my network to either ink sepolia or ink mainnet, point it at my L1 execution RPC and beacon API, then run one command and have the whole stack come up. It should include the node services, the one time init step, plus basic health checks and monitoring so I can tell if it is syncing properly.

Please make the startup path easy for someone who is not deep into blockchain ops, with clear defaults, a working first run for a full node, and a way to use an archive node if needed. If there are current docs or provider requirements I should follow, look them up online and use the latest guidance. Also include a simple dashboard view in Grafana and a quick way to test that the RPC is responding.
