Build me an open source ecommerce platform for running an online store, similar to Mage OS, based on the Magento open source ecosystem. I want a working PHP project that can be installed with Composer and can grow into a real shop, not just a demo.

It should let a store owner manage products, customers, orders, themes, and extensions, and it should stay compatible with existing Magento 2 style themes and add ons where possible. Please focus on clean core code, sensible defaults, performance, and a setup that can be upgraded later without hacks.
