Build me a self hosted price tracker that I can run with Docker and use in a browser.

I want to add products from different online stores, have the app check their price and stock on a schedule, and show a clean dashboard with price history, alerts, and current status. It should handle different currencies correctly, let me set my preferred currency, and notify me when a price drops, a target price is reached, an item comes back in stock, or any price changes. If a page has multiple possible prices, I want the app to figure out the right one, but also let me choose manually when it is unsure.

Please make it easy to manage retailers too, with per store scraping settings and a way to tweak selectors if needed. Include a modern responsive interface, dark mode, search, filtering, and a basic admin area for logs and settings. If you need current docs or setup details, look them up online first.
