Build me a self hosted AI accounting app for freelancers and small businesses.

I want to upload receipt photos, invoices, PDFs, bank statements, and handwritten notes, then have AI read them and turn them into clean transaction records with dates, merchants, amounts, taxes, currencies, line items, categories, and attached source documents. It should have an unsorted inbox for new documents, an Excel like transactions table, search, filters, bulk processing, and export to CSV or a full archive for my accountant.

Please include custom projects, categories, and custom fields where I can write my own AI prompts for extracting extra info. I also want editable system prompts and support for OpenAI compatible providers, including local LLMs if configured. Add multi currency support with historical conversion rates, including common crypto, into a base currency.

Make it private and self hosted with Docker and a database. Use a clean modern dashboard, settings pages, and simple onboarding. Look up current docs online if needed.
