Build me a JavaCard based EMV card simulator for payment terminal testing.

I want to be able to build it locally, or in Docker if that is easier, and then deploy it to a real smartcard with the right JavaCard SDK version. It should act like a payment card well enough for terminal functional tests, security testing, and fuzzing, and it should include the basic payment app plus the payment selection app.

Please make the project easy to compile from a fresh clone, and keep the setup clear for someone who is not deep into smartcard tooling. If you need to check the latest JavaCard or Gradle setup details online, feel free to do that. Also make sure the build and deploy steps are documented clearly so I can get from source code to a card I can test with as smoothly as possible.
