I want to build a system that can use WiFi signals to sense what's happening in a room without any cameras. It should be able to detect if people are present, even through walls, and monitor their vital signs like breathing and heart rate contact-free.

The main application is human pose estimation. It should analyze a space using a few low-cost ESP32 sensor nodes and process the WiFi's Channel State Information (CSI) to generate a live, stick-figure-like skeleton of a person's body. The whole thing should run on the edge, without needing to send data to the cloud, to maintain privacy.

Please build this using Rust for the core signal processing backend. Also include a simple UI to visualize the detected pose and vital signs. For testing purposes, set up a Docker container that runs with simulated data so I can try it out without any special hardware.
