Build me a Debian based touch friendly operating system image for tablets and 2 in 1 laptops, with no Google stuff or third party services baked in. It should target devices like Surface Pro, ThinkPad, Zenbook, Chromebooks, and similar x86 and x64 hardware, and use a mobile style desktop by default that feels good on a touchscreen, with the on screen keyboard working well when there is no physical keyboard.
I want the build to produce an installer image too, so I can boot from USB, try it first, and then install it with a simple graphical installer. Make it easy to customize the package list, default settings, and even add my own .deb packages or extra files into the image. If needed, include support for custom kernels and device specific tweaks so different hardware can work properly.
Keep it fully based on official Debian sources, private, open source, and easy to rebuild. If anything is unclear, look up the current docs online and wire it together in the simplest way that works.
