Build me a full stack learning platform called LearnHub where people can sign up, log in, browse public courses, and manage lessons based on their role. I want three kinds of users, student, instructor, and admin, with secure login using a cookie based session. Students should be able to search and filter courses, enroll, mark lessons complete, and see their progress in a My Learning area. Instructors should be able to create and edit their own courses, add lessons with text and video links, reorder or delete lessons, and see how many students are enrolled. Admins should have a dashboard with basic stats, charts, top courses, and tools to view users, change roles, and deactivate accounts.

Make it feel clean and modern, and use React for the frontend and Node with MongoDB for the backend. Please include a simple seeded demo setup so I can test it quickly, and make sure the app works smoothly in development and in a production build too.
